Mother's Day meal ideas

Chef Bernd Mueller from the Omni Orlando Resort at Championsgate stopped by Good Day Monday with some Mother's Day meal ideas.

Mango-Blackberry Shake with Sugar Cane
The Sugar Cane is the purest form of sugar. It is raw and unprocessed.
Sugar cane is commonly grown in the Caribbean ,Hawaii and other parts of
the world.
In Hawaii Maui, where my family and I resided, we were introduced to this
very native expendable product.
During our leisure time we would walk around the sugar cane fields and
watch as the local "Keikis" (children) chew on sugar canes like they would
do with lollipops. Aloha!

Ingredients: 6 - 8 Servers
3lb. Fresh Mangos
1lb Banana
1 pint Low fat Vanilla Yogurt
2 pint Black berries
3 oz Honey
2 ea Lime juice
3 oz Orange juice
Each drink should be decorated with spring of fresh Mint

Method of Preparation :
1. First Blend Mango , Banana and Yogurt until smooth
2. Then add Honey, Lime Juice and Orange Juice
3. Blend Black berries separately with one tablespoon of Brown Sugar
quickly
4. Strain through china cape
5. Once you purred Mango and Banana mixture into glass add some of
the Blackberry Juice to each glass take sugar Cain and move two
times clock wise
6. Decorate Sugar Cain with Strawberry and Mint Leave
Note: To add a different twist to all this take the Sugar Cain make Melon
Balls and spear (5) onto Sugar Cain then place in the Shake as Garnish


Ham and Cheese waffle sandwiches
"Monte Cristo"

Who doesn't like Waffles early in the morning for Breakfast !?I think we all
are Waffle Fan's to a certain extend we even made them at Home. The
Waffle Iron has become a House hold fixture in most of Hotels, freestanding
Restaurants and our Homes. And Believe me Kids go crazy for it
The Waffle craze went even so far that in 1971 Oregon Legendary Running
Coach and Nike Co founder Bill Bowermann experimented with an
ordinary Waffle Iron to build part of the first Nike Sport Shoe, go figure!!??

Ingredients: Yield: 6 Servings
12 ea premade waffles
5 ea whole eggs
1 cup shredded cheese
1 cup diced ham

Method of Preparation:
1. Heat oven to 400°F.
2. Generously coat baking sheet with cooking spray.
3. Place waffles on baking sheet.
4. Spoon egg over waffles, spreading to fill cavities.
5. Bake in 400°F oven until egg is set and waffles are crisp, 10 to 1 minutes.
6. Top one waffle with cheese and ham.
7. Cover with remaining waffle and press together
8. Place in oven for 2 minutes until cheese is melted.
Note: Don't forget the Powder Sugar " Angel Dust "


"Tobias" Rice Crispy Sushi
This recipes was originally made by kids for kids. Our Executive Souse Chef,
Tobias Cox wanted to create something unique and special for his kid's
birthday party by taking something very traditional and turning it into
something fun, sweet and edible for children.
Sushi making in its purest form dates back to ancient Japan. Sushi became
and still is one of Japan's great food ambassadors all over the world.
While visiting the Land of Nippon in the early 70's I had the privilege to
witness first hand the wondrous world of Sushi making by raiding on the
Bullet Train with my Wife from Tokyo to Osaka.

Ingredients Yield: 6-2inch cuts Servings
1 pkg. Rice Crispy Treats
2ea Fruit roll up
1ea. Twix bar or other candy bar
1ea. Mango cut in strips
2ea Strawberries cut in strips
¼ cup Chocolate sauce

One can of non stick cooking spray
Method of Preparation:
1.Heat up rice crispy treats in microwave, 20 seconds
2.Place on a sprayed plastic wrap, will be very hot, spread out with a sprayed rubber
spatula, spread out to a lag square, place candy bar, mango and strawberries in middle
3.Roll up the treats using the plastic wrap, same as a sushi roll.
4.Place the fruit roll up on top to resemble fresh tuna, cool in refrigerator until set 2-3
minutes.
Note: Serve with Raspberry or any other fruit Coli
