Stewed Black-Eyed Peas and Beer Braised Collards

FOX 35 received a visit from Dan Nestor, Head Chef, A Land Remembered classic steakhouse at Rosen Shingle Creek. He put together a "good luck' menu of Southern foods you should eat on New Year’s Day to insure a great coming year.

 

Stewed Black-Eyed Peas
Ingredients:

  • 1/2 lb dried black-eyed peas
  • 1 quart chicken stock
  • 1 ham bone (usually available at you local supermarket)
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • Salt and pepper to taste


Beer Braised Collards
Ingredients:

  • 1 lb fresh collards stemmed and chopped
  • 8 strips bacon sliced into small strips
  • 1 large onion julienned
  • 2 bottles of Rosen Hotel’s Gator Drool beer (or any canned or bottled beer)
  • 6 oz rice wine vinegar
  • 4 oz brown sugar
  • Cayenne Pepper to taste
  • Salt & Pepper to taste

Cook bacon and onions add collards and other ingredients and simmer for 30 minutes. Add stewed black-eyed peas for a bit of New Year’s tradition.

Bone In Ribeye
20oz Ribeye seasoned with sea salt and pepper grilled to desired temperature.
