Seafood twice a week for health benefits! Salmon grills up nicely and tastes great on its own. This recipe adds a sweet touch with garlic and honey. Serve it up with refreshing, unique cucumber salsa perfect for dinner on a hot summer day.

Ingredients:
1½ pounds salmon fillets
1/3 cup butter, melted
¼ cup honey, divided
1 tablespoon chopped garlic
2 cups diced cantaloupe
1 cup diced cucumber
¼ cup Culinary Circle® Crumbled Feta Cheese
3 tablespoons minced red onion
2 tablespoons minced fresh jalapeño pepper
1 tablespoon chopped cilantro
1 teaspoon lime zest
- juice of ½ lime
Directions:
1. Place salmon fillets in a shallow dish. In small bowl, combine melted butter, 3 tablespoons honey and garlic; salt and pepper to taste. Whisk until well combined. Pour over salmon; let stand 30 minutes.
2. Meanwhile, in medium bowl, combine remaining ingredients and remaining 1 tablespoon honey; toss to combine. Salt and pepper to taste. Set aside.
3. Prepare grill to medium heat. Remove salmon from dish. Place salmon, skin-side-up, on grill. Grill until golden brown. Carefully turn salmon over and continue grilling until salmon flakes easily with a fork (about 10 minutes per inch of thickness).
