Meatless Monday: Blueberry smoothie and quinoa salad

Get these recipes courtesy of Erica Wasser, a registered dietician and weight loss coach at Life Time Fitness.

Blueberry Smoothie
1 scoop of whey isolate
4 oz of full-fat Greek Yogurt
1 cup fresh or frozen blueberries
2 Tbsp Ground Flaxseed

Blend until smooth and enjoy

Blueberry quinoa salad
2 cups quinoa
2/3 cup pine nuts
6 tablespoons shallot, finely minced
1 cup sulfite-free dried blueberries
2 teaspoons fresh lemon peel, zested
2 teaspoons fresh orange peel, zested
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
Kosher salt
freshly ground black pepper
1/2 teaspoon red pepper flakes

Toast pine nuts in a medium hot skillet until lightly golden brown and remove to cool.
Using the same skillet, sauté the shallots.
Zest citrus, set aside
Cook quinoa following directions on package
While quinoa is still hot, add pine nuts, shallots, blueberries, citrus zest, butter and olive oil. Toss gently
Season with pepper and salt to taste
Add red pepper flakes to taste
