
Good Day New York has some ideas for Thanksgiving leftovers.
Joe Racioppi, executive chef at Mcloone's Pier House in Long Branch, N.J. made some turkey sliders using leftover turkey.
He also shared a recipe for sweet or mashed potato.

Turkey Sliders
16oz of Dark and White Meat Turkey, diced
12oz of Stuffing
1 egg
Pinch of fresh sage
Salt & pepper to taste
12 Brioche slider buns
Cranberry Mayo (see below)
Place diced turkey, stuffing, sage, salt/pepper & egg in a bowl and mix together and shape into 2-3 oz patties. Cook over a medium heat until golden brown, approx 5 minutes
Place on burgers on buns and top with cranberry mayo
Cranberry Mayo-Mix together 4oz fresh cranberry sauce & 4 oz of Hellman's mayo
@Sweet or Mashed Potato Cakes
Left over mashed or sweet potatoes
3 eggs
8oz flour
15 oz Panko breadcrumbs
Form 4oz cakes, approx 1 ½ by 3 ½ round, from your leftover mashed or sweet potatoes.

Dust the cakes in the flour, then dip in beaten eggs and coat with breadcrumbs
Sauté until golden brown, about 5 minutes
Finish in a 375 degree oven for 10-15 minutes
