John D Duck Breast ( signature entree for the NYE dinner)
8 oz duck breast Marinade: 1 cup soy 1/2 cup fresh ginger 2 shallots 2 cloves garlic 2 tbsp sesame oil 1 scallion
Sauce: 8 oz pomegranate juice 8 oz Demi glacé 2 oz soy sauce 2 oz red wine Salt & pepper to taste
Side dish: 1/4 cup Napa cabbage 1/4 cup Purple cabbage 1/4 cup Black beans 1/4 cup Corn
Hazelnut infused oil: 1/8 cup blanched hazelnuts 1/4 cup extra virgin oil
Combine the two, place in food processor, strain through cheese cloth and save the oil.
