Hollerbach's Sauerkraut recipe
Serves 4 to 6
1 24 oz jar of Sauerkraut
½ of jar Riesling wine
½ of jar water
¾ cup chopped onion
¾ cup chopped apple
¾ cup apple wood smoked bacon
10 juniper berries
Salt and Pepper to taste
Over medium heat, simmer onions and bacon until soft. While that's simmering, empty sauerkraut jar into colander and rinse. Squeeze sauerkraut dry. Add sauerkraut to onions and bacon, add water and wine, apples and juniper berries. Simmer all ingredients and enjoy.
Hollerbach's Himmel und Erde (heaven and earth)
Serves 4 to 6
4 medium potatoes, peeled and cut into cubes
2 granny smith apples, sliced and peeled
1 tbsp sugar
About 1 cup water
6 oz bacon diced
4 oz onions diced
In one inch of boiling water, add potatoes, apples and sugar. Heat to boil, cover, reduce heat and simmer until tender, approximately 12 to 15 minutes.
Brown bacon and onions in a frying pan.
Combine all ingredients in a bowl and mix until consistency of mashed potatoes and serve immediately.
