Antonio Casamento can call his cows by name, and many times, they come.
"Lola. We got Dolly. We got Caramela, which is candy," he said.
But Casamento's cows are not what most people would expect. They are water buffalos.
He makes mozzarella and 14 other kinds of cheese out of their milk on a few rented acres in Plant City. Foodies come from all over the state to buy it for up to $40 a pound at green markets and festivals
But here is the catch: Right now, the cheese has to be sold as pet food because it not pasteurized.
Casamento wants to sell his product nationally as food for people. To do that, he would have to spend about a quarter-million dollars on pasteurization equipment.
Casamento is against it because he says it robs the milk of its nutrients. Despite that, he is working toward saving his money to buy the machinery, and hopefully make even more cheese than he is now.
