Pan frying techniques with Norman King

Southerners have a way for dropping things in hot grease, and fry it into something lip-smacking good! Southern Living test kitchen pro Norman King stopped by Good Day Atlanta to prove when it comes to frying, nothing is off-limits – not even peanut butter!

Recipe: Deep Fried Peanut Butter and Jam Sandwich
Yield: Makes 10-12 servings

Ingredients:

16 slices sandwich bread
Creamy peanut butterStrawberry jam
1 cup milk
1 large egg
2 cups panko (Japanese breadcrumbs)
Vegetable oil
Powdered sugar

Preparation:

1. Spread peanut butter on half of bread slices (about 2 Tbsp. on each). Spread strawberry jam on remaining half of bread slices (about 2 Tbsp. on each) and place on top peanut butter halves, jelly sides down. Trim crusts from sandwiches and cut into quarters.

2. Whisk milk and egg together in a 9-inch pie dish. Dip sandwich quarters into milk and egg mixture and dredge in panko.

3. Pour oil to depth of 2 inches into a Dutch oven; heat to 350°. Fry sandwiches, in batches, 1 to 2 minutes on each side or until golden brown. Drain on a wire rack over paper towels. Dust with powdered sugar.
