We helped ring in the Chinese New Year with food from China Fun Chinese Restaurant on Manhattan's Upper East Side.
Chef Wing Fong Chan and owner Dorothea Wu prepared chicken and broccoli in the Good Day Cafe.
Sunday marks the beginning of the year of the snake.
Ingredients:
2 cups oil
3 tbsp soy sauce
1/2 tsp sugar
1 tbsp cooking wine
1 tsp vinegar
1 tsp corn starch
1 egg white
1 tbsp green scallion
1/2 lb sliced chicken
1/2 lb broccoli
1/2 sesame oil
Recipe:
make the brown sauce with soy sauce, sugar, cooking wine and vinegar
put chicken in a big bowel stir it with water .egg white and 1/2 tsp corn starch and marinate for 20 minutes boil the chicken in the oil for 10 seconds add broccoli for another 20 seconds then rinse them in hot water
put 1 tbsp oil in the wok for 5 seconds, add green scallions, stir for few seconds add brown sauce, add chicken and broccoli, stir fry for a few seconds, add 1/2tsp corn starch, finish with sesame oil
