French Bread 1.5 lbs Dark Chocolate 1/2 lb Milk Chocolate 1/2 lb Heavy cream 5 cups Sugar, granulated 1 lb Egg yolks 10 ea Vanilla paste 1 tblspn
1. Cut bread into 1-inch cubes, set aside. 2. Chop chocolate into 2-inch pieces, set aside. 3. Heat cream, 1/3 of the sugar and vanilla over medium heat to a simmer. Mix well. 4. In a separate bowl, beat yolks and remaining sugar until well blended. 5. Slowly add the simmering cream mixture to the yolks. 6. Cook for about 5 minutes until mixture reaches a thin custard consistency. 7. Remove custard from heat. 8. Add the chopped chocolate and stir until chocolate is melted. 9. Pour custard mixture over the cubed bread and mix together. Do not smash the bread. 10. Place mixture into a nonstick pan and press down gently. 11. Cover with foil and bake @ 325F.
