A Weelicious Breakfast Is Simple & Healthy For Your Family

Preparing a balanced breakfast for you and your kids doesn't have to require loads of labor in the kitchen. Catherine McCord, founder of Weelicious.com and author of Weelicious: One Family. One Meal. joined Lisa Breckenridge and her daughter Elise in studio today to share two fast, fun and fresh ideas to kick start the day. The best part? Mealtime can be a team effort. Catherine encourages parents to give kids age-appropriate jobs so they feel empowered and excited to try what they've helped create. Elsie was up for the challenge and showed how easy it is to get kids involved.

Crispy Orange Stuffed French Toast Sticks (serves 2) 
Prep Time:10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

1/4 cup whipped cream cheese
2 tablespoons orange marmalade
4 slices sandwich, french or challah bread, crusts on or off
2 large egg
1/4 cup milk
1 cup heritage flakes cereal, crushed (corn flakes or your favorite flake cereal work great too)
butter or oil, for greasing pan


  1. In a bowl use a fork to whip the marmalade and cream cheese until thoroughly combined
  2. Spread the mixture evenly on two slices of bread and top with remaining bread creating 2 sandwiches.
  3. Slice the sandwiches into 1 inch sticks.In a bowl whisk the eggs and stir in the milk.Place the cereal in a zipper bag and using a rolling pin or mallet crush into tiny pieces and pour in a flat shaped bowl.
  4. Dip the sandwich sticks first in the egg mixture on each side and then into crushed cereal coating completely.
  5. Heat 1 tablespoon of butter or oil in a large sauté pan and cook the sticks over medium heat for 1-2 minutes per side or until golden.
  6. Serve with honey, maple syrup or on their own.

Brainy Breakfast (serves 2)
DIY meals are super popular in Catherine's house. She suggests letting your kids get creative with the brainy breakfast. Set out a bunch of ingredients and give them the opportunity to personalize their meal and put what they want in it.

Prep Time:5 minutes
Total Time: 5 minutes

1 cup Greek yogurt (0 or 2 %)
1 tablespoon honey
1 small apple, cored and chopped
½ cup mixed berries
2 tablespoons chopped walnuts
2 tablespoons flax seeds (ground or whole)
½ teaspoon ground cinnamon


  1. Place all ingredients in a bowl and stir to combine.
