MYFOXNY.COM - Art Smith, Oprah Winfrey's former personal chef, is one of the restaurant industry's most successful restaurateurs.

He also suffers from type 2 diabetes and battled his weight for many years.

Now, 120 lbs. lighter, Smith shares tips on preparing healthful foods loaded with flavor in his new book, Art Smith's Healthy Comfort.

THREE BEAN TURKEY CHILI

2 TABLESPOONS EXTRA VIRGIN OLIVE OIL

2 LBS OF GROUND TURKEY

2 TABLESPOONS CHILI POWDER

1 TABLESPOON SMOKED PAPRIKA

1 TABLESPOON CUMIN

1 LARGE ONION CHOPPED

4 GARLIC CLOVES

2 18 OZ CANS STEWED TOMATOES

1 15 OZ CAN OF KIDNEY BEANS

1 15 OZ CAN OF BLACK BEANS

1 15 OZ CAN OF CANNELLINI BEANS

3 TABLESPOONS OF BALSAMIC VINEGAR

1 TABLESPOON HOT SAUCE

SALT TO TASTE

FOR THE GARNISH:

8 TABLESPOONS CHOPPED CILANTRO & CHIVES

DIRECTIONS:

HEAT OLIVE OIL IN A LARGE DUTCH OVEN OVER MEDIUM HEAT. ADD TURKEY, CHILI POWDER, PAPRIKA AND CUMIN. COKK FOR ABOUT 6-8 MINS. OR UNTIL THE TURKEY IS COOKED. ADD THE ONION, GARLIC, TOMATOES, BEANS, BALSAMIC VINEGAR AND HOT SAUCE AND BRING TO A SIMMER. COOK FOR ABOUT 45 MINS. OR UNTIL ALL THE FLAVORS HAVE MARRIED. SEASON WITH SALT.

ASSEMBLY:

DIVIDE THE CHILI INTO 8 SERVING BOWLS AND ADD GARNISH.

    “I was supposed to be dead before last Easter," said Valerie Harper about her diagnosis of cancer in the lining around her brain.  Harper's indomitable spirit and the support from fans of her character 'Rhoda' in the 1970s hit series 'The Mary Tyler Moore Show' has kept her going. "It’s a tasty headline," said Harper about the magazine where the inaccurate report was made.
