Yummy Mummy Cheese Fingers: Healthy Halloween snacks from Rochelle Trotter

Posted: Updated:
CHICAGO (FOX 32 News) -

Halloween is the time of year when we can expect our kids to be "buzzing," due to the amount of candy they get from Trick-or-Treating. Rochelle Trotter has fun, healthy, inexpensive treats you can make too!

Yummy Mummy Cheese Fingers

Adapted from Family Fun Magazine

This great treat is actually fun to make and good for kids given its low calorie, high protein and high calcium mix.

The protein in this treat helps slow down metabolism of sugars and carbs found in candy, so pairing this with the sweet treats your kids will eat will help minimize the sugar "burst" and instead provide sustained energy instead of a quick meltdown.

Since this is dairy, be sure to keep refrigerated until ready to eat. Go Yummy Mummy!

  • Low fat Mozzarella String Cheese sticks
  • Green bell pepper
  • Cream Cheese
  • Red bell pepper (optional)
  • Slivered Almonds (optional)

Special Note: Parental supervision is required for this recipe because of the use of a knife!

  1. Using a butter or other dull end knife, cut each cheese stick in half
  2. Carve a small indentation in the "rounded end" of each cheese stick about 1/4" from the end (this is where the fingernail will go)
  3. Make finger joint marks near the fingernail area as well as near the bottom of the stick (where the knuckle would be located)
  4. Slice the green or red bell peppers into strips approximately 1/4"
  5. Turn strips over and remove most of the pulp
  6. Cut the strips into nail sized pieces
  7. Apply a small amount of cream cheese to the nail section of the cheese finger, and gently apply a pepper "nail"
  8. Alternatively, apply a slivered almond piece to create a dull worn natural looking nail
