Recipes beyond the turkey

Here are some unique recipes that are a bit different than your usual Thanksgiving fare. Here are a few ideas, and

Pumpkin Mashed potatoes
6 cups water
2 cups chicken broth
3 cups canned pumpkin
2 tsp pumpkin pie spice
1/2 cup butter
2 1/2 cups instant potatoes


In a pot combine water, chicken stock, pumpkin pie spice, butter and pumpkin to a boil. Remove from heat and whisk in instant potatoes until fluffy.  Serve with turkey gravy and enjoy!

Cooking stuffing in tins maximizes the crispy parts. Also, the individual portions are easy to freeze so you can cook them up before or have easy leftovers.
Herb Stuffing Muffins
Makes 14-16 muffins
INGREDIENTS:
1/2 cup (1 stick) butter, plus more for greasing muffin tin
1 cup chopped celery
1/2 cup chopped onion
1 teaspoon dried thyme leaves
3/4 teaspoon poultry seasoning
1/2 teaspoon seasoned salt
1/4 teaspoon ground black pepper
6 cups dry unseasoned bread cubes
2 cups chicken stock
DIRECTIONS:
Preheat oven to 375°F.
Melt butter in a large skillet on medium heat. Add celery and onion; cook and stir 5 minutes. Stir in thyme, poultry seasoning, seasoned salt and pepper.
Place bread cubes in a large bowl. Add celery mixture and broth; toss gently until well mixed. Spoon into generously greased muffin tins, pressing down so each cup is well-filled.
Bake for 25-30 minutes or until heated through and lightly browned.
Fruit Salad with Cranberry Dressing

Cook Time: 5 mins
Total Time: 15 mins
Ingredients
·         2 cup(s) cranberries
·         1/3 cup(s) water
·         1 cup(s) sugar
·         1/4 cup(s) orange juice
·         2 large grapes, seedless
·         1/2 large pineapple, fresh
·         2 large pear(s)
·         1 kiwi
·         lettuce leaves
·         mint, fresh
Preparation
1. For dressing, in a medium saucepan combine cranberries and water. Bring to boiling; reduce heat. Simmer, covered, for 4 to 5 minutes or until berries just begin to pop. Remove saucepan from heat; stir in sugar and orange juice. When cool, press mixture through a sieve. Discard cranberry skins. Cover and refrigerate the dressing until thoroughly chilled. (The dressing will thicken slightly as it chills.)

2. To serve, line 6 salad plates with lettuce leaves. Arrange fruit on leaves. Drizzle with dressing. Garnish with mint, if desired.
