Good Day Cafe: La Rosetta

La Rosetta restaurant on West 14th. Street has been serving up Italian-Mediterranean cuisine since October 2013.

On Monday, January 6, the eatery is offering its special Three Kings holiday menu consisting of pan seared whole Branzino and other seafood dishes.

Three Kings Day marks the day biblical adoration of the baby Jesus.

RECIPE

Pan seared whole Branzino 1,1/2 to 2 LB.

?Clean the inside by removing all intestines , leave the head on and rinse well with cold water. Lightly salt the inside cavity and stuff with fresh Thyme, Tarragon, Parsley and 2 slices of Lemon and a sprinkle of white pepper and firmly close the fish. Pre heat a sauteeing pan on medium to high heat with 2 table spoons of olive oil add a small amount of butter,bring it to a searing stage and put the Branzino in the pan for approximately 2 minutes on each side
