Good Day Cafe: veal spiedini

Executive chef Michael DeGeorgio of Vetro Restaurant and Wine Bar in Queens prepared veal spiedini Siciliano in the Good Day Cafe.

RECIPE

Veal Spiedini Siciliano - Vetro Style

Serves 4 people as an entrée.

Ingredients

8 slices Veal Top Round, 3-4 oz. each

o Flattened into scalloppine

Stuffing

2 oz. - Chopped shallots

4 oz. - Raisins or currants (soaked in warm water)

4 oz. - Grated Pecorino cheese

16 oz. - Heavy cream

4 oz. - Olive oil for shallots and for brushing the Veal

8 oz. - Bread - partially skinned (day old)

o Panko crumbs for texture

3 Tbsp. - Chopped parsley

TT- salt, pepper, oregano

Salad

Baby arugula

1 ½ - Sliced beefsteak tomatoes

1 Sliced orange (peel on)

1 Sliced lemon (peel on)

½ Sliced fennel with tops

½ Sliced red onion

4 oz. - Olive oil

1 oz. - Lemon juice

1 oz. - Red vinegar

1 tbsp. - Chopped parsley

**Skewers for grilling the veal spiedini

Method of Preparation

Stuffing

Sauté the chopped shallots in 2 oz. of olive oil until light brown. Set aside to cool

In a large bowl soak the break with the heavy cream, mixing by hand until soft

Mix shallots, soaked raisins, pecorino, parsley, salt, pepper and a pinch of oregano into the break mixture

Mix well and let cool in the refrigerator

Stuffing the Veal

Lay the 8 slices of Veal onto a cutting board

Divide the stuffing onto the 8 slices of veal and roll up tightly and secure with skewers

Brush each Spiedini with olive oil, salt and pepper and set aside

Salad Topping

In a bowl mix the sliced tomatoes, oranges, lemons, red onion, fennel and parsley

Season with salt and pepper, olive oil, red vinegar and lemon juice

Set aside in refrigerator

Wash and set aside baby arugula

Final Preparation

On a seasoned grill, lay the Veal Spiedini on an angle

Grill until golden brown and medium inside, turning evenly

Presentation

Serve on a bed of baby arugula, topped with the salad and dressing

*Note

Veal Spiedini may be pan fried as well.
