Recipes: Cooking with kohlrabi

Kohlrabi & carrot fritters with avocado lime cream dressing

Ingredients:
2 cups shredded kohlrabi
1 cup shredded carrot
1 egg
¼ teaspoon salt
¼ cup Flour plus ½ teaspoon baking powder - (Can also use ¼ cup of Bisquick instead of the flour and baking powder)
¼ teaspoon smoked paprika
Oil for frying
For Cream sauce:
½ cup mashed avocado
¼ cup Greek plain yogurt
½ lime juice and zest
Salt and pepper to taste
Green onions (for garnish)

Directions:
Top and peel the kohlrabi to its flesh. Clean a carrot ready for shredding.
Shred the vegetables in a food processor using a coarse blade or a coarse hand held grater.
Salt the vegetables and let drain in a colander for 20 minutes. Squeeze the shredded vegetables in a cloth to remove excess moisture.
For Avocado Lime cream:
In a blender or small bowl, mix the mashed avocado, Greek yogurt, lime juice and zest.
Add salt and pepper to taste. Chill while preparing the remainder of the dish.
For the fritters:
In a bowl, mix to combine the egg, salt, pepper and smoked paprika, flour (or bisquick).
Add the squeezed vegetable and combine..
Place enough oil in a large skillet (for about ¼-inch depth). Heat the oil (test with a small amount of mix).
Place a scoop (about 2 tablespoons) of vegetable mix into the oil and flatten with a spatula.
Fry on one side until browned, turn and repeat.
Remove and place on a paper towel lined plate, place in a 200 degree oven to hold.
Serve fritters with the cream sauce and top with sliced green onions.

Kohlrabi, Apple, and Carrot Salad with Honey Mustard Dressing


Ingredients:
2 cups of coarsely shredded Kohlrabi
1 Apple, sweet and tart
2 cups Match stick Carrots
Dressing:
1 1/2 Tbs Honey
1 1/2 Tbs Grainy Mustard
¼ cup Light flavored Oil such as grape seed, safflower or light olive oil.
2 - 3 Tbs Apple Cider Vinegar

Directions:
Peel the kohlrabi (both skins) to the pale green center. Coarse grate or shred in a food processor.
Slice the apple and cut it into matchsticks or small dice
In a small bowl add the dressing ingredients and whisk together.

Pour over the vegetables and allow to sit for about 30 minutes before serving to allow the flavors to meld.
